When you think of slow cooker recipes you probably imagine pulled pork, stews and other kinds of soup, right? Turns out the most popular one on Pinterest right now isn't any of those things. In fact, it's something much closer to a dish you'd order at Chipotle — a chicken burrito bowl.
Melissa Mondragon posted this recipe to her blog No. 2 Pencil in 2014, and since then, it's been pinned nearly 600,000 times. Mondragon adapted this recipe from her one-pan chicken burrito bowls to require no pre-cooking. You can just toss in a pound of chicken breast, along with some broth, canned tomatoes, and spices, and let that cook for four hours. Once the chicken reaches 165 degrees, simply take it out of the pot and cook some instant brown rice and black beans for 30 minutes in the juices. Then add the chicken back in, and melt some cheese on top of it for a few minutes, and dinner's ready!
Mondragon recommends serving this as a burrito bowl for dinner, or — if you're the meal-prepping type — wrapping the filling in tortillas, for a more traditional burrito, and freezing them so you have grab-and-go lunches ready in a pinch.
