What's the best part of any ? The cheese, of course. Johnny Di Francesco, of , a restaurant in Melbourne, Australia, reimagined the classic pizza in a majorly cheesy way. The chef saw the news about the 's previous record holder for the greatest variety of cheese on a pizza, and he was determined to go even cheesier, according to the .
Di Francesco had previously created the famous 99-cheese pizza, which was added to the menu at 400 Gradi. To top the previous record holder, at 111 cheeses, Di Francesco created a pizza made with 154 varieties of cheese.
"While the 154-cheese pizza may not have been a culinary impossibility, it was certainly a culinary challenge!" the chef said. "We knew it was an ambitious idea but probably more so than first anticipated."
Di Francesco explained that it was important to be sure each type of cheese was "distinct enough from the next, yet complimentary to each flavor and could blend really well together once combined." A 154-cheese pizza is truly an art form.
The record-breaking pizza included cheeses such as gorgonzola, pecorino, Taleggio, aged cheddar and gouda plus, literally over 100 more.
After the initial 154-cheese pizza was made, using a gram of each type of cheese, 400 Gradi rolled out the cheesy pizzas to different locations in Australia. In order to do so, the remaining cheese was melted down together, then chilled into a single block of 154 cheeses to be distributed.
A total of 797 of the cheesy pizzas were sold, and they were sold out within just five days. Di Francesco said, "Many [people] were completely overwhelmed and in awe of course; watching my customers' facial expressions as they took their first bite into a slice of cheesy goodness — well, that reaction is priceless."
